Appetizer, dinner, or snack, this can be whatever you want it to be! And boy was it good!
Chicken Alfredo Garlic Bread

Cook time: 50 minutes
Servings: 4 (potentially more if just using as an appetizer)
Ingredients
4 chicken breasts
1 loaf of French bread
Olive oil
2 lemons
Cajun seasoning
Paprika
3 tbs butter
Garlic butter spread (I made my own using melted butter, minced garlic, chopped parsley, and crushed red pepper flakes)
3 tbs minced garlic
2 cups heavy cream
Fresh grated Parmesan cheese (about 1 cup)
2 cups mozzarella cheese
Directions
Preheat grill to medium high heat.
Season chicken with olive oil, juice from one lemon, Cajun seasoning, and paprika.
Place chicken on grill.
While chicken cooks we will make the sauce. I cooked the sauce on the grill next to the chicken for ease. Start by melted butter and sautéing minced garlic along with Cajun seasoning and lemon juice. After about 1 minute, add heavy cream. Bring to a simmer. Turn off heat and melt in Parmesan cheese. I used about 1 cup.
Flip chicken and continue to cook while also cooking the Alfredo sauce. Cook chicken to atleast 165 degrees F internal. Remove chicken once done.
Slice a French lot of bread in half. Remove some of the inner part of the bread to create a a pocket for our stuffing.
Spread garlic butter over bread. Top with mozzarella, followed by our Alfredo sauce and chicken. Top with more mozzarella cheese and place on the top rack of the grill.
Cook bread over low heat until all cheese is melted and bread is nice and toasty. Garnish with parsley and dip and remainder of Alfredo sauce. Enjoy!
