Traditional poppers can sometimes need an upgrade... this is just the recipe if you're trying to impress.
Elote Jalapeno Poppers
Prep time: 15 minutes
Cook time: 60 minutes
Servings: 4
Ingredients
• 12 slices of bacon diced
• 6 jalapeños
• 1 tbsp tajin seasoning
• 1 block softened cream cheese
• 1/2 cup Mexican cheese
• Juice from 1 lime
• 6 mini corn on the cobs
• Cotija cheese for topping
• Fresh chopped cilantro for topping
Directions
1. Preheat the griddle to medium heat. Cook diced bacon until browned.
2. While bacon cooks, grill corn on the cob until charred on all sides. Remove from grill
3. In a mixing bowl, combine cooked bacon, cream cheese, shredded Mexican cheese, Tajin, and lime juice. Slice corn off of the cob into a bowl. Stir to combine.
4. Slice jalapeños in half and deseed the inside. Stuff each jalapeño with cream cheese stuffing.
5. Grill indirectly over low heat for about 30 minutes. Remove from the grill.
6. Garnish with cotija cheese and cilantro. Enjoy!
