You're going to want to try these! These would also be possible in a dutch oven or crock pot.
Smoked Italian Beef Sandwiches

Ingredients
3 lbs of beef chuck roast
1 onion sliced
Half a jar of sliced pepperonchinis
4 tbs butter
4 cups beef broth
Salt, pepper, and garlic
Olive oil
Sandwich sub rolls
12 slices provolone cheese
Giardiniera
Directions
Get grill set up for charcoal burning. Light enough charcoal to get a little bit of heat. Be careful not to light too much if your grill doesn’t allow you to control your temperature.
While charcoal lights, season chuck roasts with olive oil, salt, pepper, and garlic.
Place meat on grill or smoker and cook low and slow until you get a nice bark on it. This could take 2-3 hours.
Once you are happy with the color on your meat, transfer to a casserole dish. Top with sliced onions, pepperonchini peppers and juice, and butter. Pour beef broth over mixture. Cover with foil and place back onto grill or smoker.
Continue to braise until beef is prove tender.
Remove from grill and let rest in oven for 1-2 hours.
Now it’s time to assemble the sandwiches! Place beef, onions, and peppers in a bowl and shred. Reserve braising liquid to dip sandwiches in later. Place two slices of cheese on sandwich sub roll followed by beef, and giardiniera. Wrap in foil and baked at 400 for about 5-10 minutes.
Dip sandwiches in braising liquid and enjoy!
