Marry Me Chicken Stuffed Pasta

This was an amazing take on a traditional pasta dish! This can be done on a stovetop or grill.




Marry Me Chicken Stuffed Pasta

Prep time: 15 minutes 

Cook time: 45 minutes 

Servings: 6


Ingredients

  • 3 chicken breasts

  • 1 onion diced 

  • 4 oz sun dried tomatoes (about half a jar) 

  • 2 big handfuls of spinach

  • 1 tbs minced garlic

  • 3 tbs butter 

  • 1/4 cup white cooking wine

  • 1 cup chicken broth

  • 1 pint heavy cream 

  • 5 oz of grated Parmesan 

  • 2 cups shredded mozzarella 

  • 1 box of jumbo shells

  • Olive oil

  • Smoked paprika

  • Tony Chachere’s original 

  • Italian seasoning

  • Parsley for garnishing 


Directions

  1. Preheat grill to medium high heat. Place skillet on grill. 

  2. Tenderize chicken breasts and season liberally with olive oil, paprika, Tony’s, and Italian seasoning. 

  3. Grill chicken breasts about 10 minutes per side and remove to let rest. Meanwhile, boil pasta shells. 

  4. While chicken cooks, dice onion and add to skillet with butter. Cook until softened and browned. 

  5. Once chicken is done resting, slice into bite size pieces. 

  6. Next, add sun dried tomatoes, spinach, and garlic to skillet. Cook until spinach becomes wilted. 

  7. Deglaze skillet with white cooking wine. Add in chicken broth and bring to a simmer. Simmer until reduced by about half. 

  8. Add in diced chicken. 

  9. Add in heavy cream. Reduce heat to low and melt in Parmesan. Remove big pieces of chicken and veggies and transfer to a bowl. Turn off heat directly under skillet, but leave on a burner on low to medium low for indirect heat.

  10. Stuff each pasta shell with chicken mixture and place back into skillet. 

  11. Top with mozzarella cheese. Close lid and let cheese melt. 

  12. Once cheese is melted garnish with parsley and enjoy!
