Pasta with a cajun twist!


Pastalaya



Ingredients

  • 2 lbs chicken breasts cubed  

  • 1 lb andouille sausage thinly sliced 

  • 1 yellow onion diced 

  • 2 bell peppers deseeded and diced 

  • 2 jalapeños deseeded and diced 

  • 4 green onions. White and light green parts thinly sliced

  • 1 Tbs minced garlic

  • 14 oz can petite diced tomatoes 

  • 4 cups chicken broth 

  • 16 oz spaghetti pasta

  • 3 tbs tomato paste 

  • 2-3 Tbs Tony Chachere’s original seasoning 



Directions

  1. Preheat skillet and oil to medium high heat.

  2. Add diced onion and chicken. Season with Tony’s. Cook for a few minutes. Add peppers, jalapeño, green onion, and sausage. Cook until sausage is brown and veggies are soft. 

  3. Add tomato paste, minced garlic, and diced tomatoes. Cook for another minute or two. 

  4. Add spaghetti pasta and chicken broth. Bring to a boil. Reduce heat, cover, and simmer. 

  5. Cook until spaghetti noodles are done stirring occasionally. 

  6. Turn off heat and season to taste with more Tony’s!
