Mexican Fried Rice

Ingredients
3 chicken breasts cubed
1 onion diced
1 bell pepper diced
1 jalapeno diced (optional)
4 cups cooked, day old rice
Fajita seasoning of choice
1 can rotel
1 can corn
2-3 tbs tomato bouillon
White queso for topping
Cilantro for topping
Olive oil
Butter
Directions
Preheat one side of flat top to medium high heat. Preheat the other side to low.
While griddle heats up, dice up chicken breasts. Coat with olive oil and season with fajita seasoning of choice.
Dice all veggies listed above.
Add chicken and veggies to the griddle. Cook until browned and combine. Transfer to low heat side of griddle.
Add a few tbs of butter to medium high heat side and let melt. Add cooked rice, rotel, canned corn, and tomato bouillon. Stir to combine. Cook for 3-4 minutes and then add in chicken and veggies. Stir to combine.
Turn down heat to low and drizzle on queso. Top with cilantro and enjoy!
