Loaded Tater Tot Breakfast Casserole

Cook time 90 minutes
Servings: 6-8
Ingredients
1 lb breakfast sausage
1 lb bacon diced
10-12 eggs
2 lb bag of tater tots
4 oz can diced green Chiles
2 cups shredded cheddar cheese
Cream gravy for topping (see gravy blogpost)
Directions
Remove tater tots from freezer and let thaw out. Preheat oven to 375 degrees F.
Brown breakfast sausage. Remove from pan and drain grease.
Brown diced bacon. Remove from pan and save grease for gravy.
Add tater tots to a baking dish. Top with the breakfast sausage, bacon, and green Chiles. Pour scrambled eggs over mixture. Top with cheddar cheese.
Bake for about 45-60 minutes depending on when the eggs are fully cooked.
Removed from oven and top with cream gravy. Enjoy!
