These skewers are perfect for a gameday appetizer or entree!
Garlic Parmesan Chicken Skewers
Ingredients
3-4 chicken breasts
6 tbs butter
2 tbs chopped parsley
2 tsp crushed red pepper
1 tbs minced garlic
1/4 cup Parmesan
Olive oil
Spice and herbs seasoning of choice (I used Tony Chachere's)
Directions
1.Cut chicken breasts into slices. Coat in olive oil and seasoning.
2. Slide chicken onto skewers.
3. Heat your fryer (I used Charbroil's big easy fryer, but you could also use an air fryer on the chicken setting). If using the Charbroil big easy fryer, cook for 20-25 minutes.
4. While the chicken cooks, combine butter parsley, crushed red pepper, garlic, and Parmesan into a bowl.
5. After 20-25 minutes remove chicken and coat with butter mixture, saving about half. Return to fryer and cook for another 10 minutes.
6. After 10 minutes, coat the chicken with remaining butter mixture. Cook for another 10 minutes or until chicken reaches 16 degrees internal. Enjoy!
