Boudin Stuffed Jalapeno Poppers


Ingredients

  • 12 jalapeño peppers

  • 12 oz boudin sausage

  • 2/3 cup shredded cheddar cheese

  • 12 oz thin cut bacon

  • Cajun seasoning to taste


Directions


  1. Preheat grill to 300 degrees F.

  2. While grill preheats, assemble poppers. We’re going to start off by slicing the top third off of each pepper. Next scoop out the inside of each pepper. Rinse under water.

  3. Remove casing from sausage and add to a mixing bowl. Add in cheese and seasoning. Stir to combine.

  4. Stuff each pepper with sausage mixture.

  5. Wrap each pepper with one strip of bacon, securing the ends with toothpicks.

  6. Place on grill with stuffed side up first. We’re going to grill these low and slow to ensure our bacon and sausage cooks evenly. Cook for 15-20 minutes per side or until done to liking. I cooked mine for about 75 minutes.

  7. Remove from grill and enjoy!
