Grilled Salmon Florentine
Ingredients
4-6 salmon filets
2 cups ricotta cheese
1 cup shredded Italian cheese
1 shallot, diced
5 oz sauteed spinach
Tony Chachere's spice and herbs seasoning, seasoned to taste
Italian Season, seasoned to taste
Directions
Preheat grill to 400 degrees.
Prepare salmon stuffing. Combine diced shallot, sauteed spinach, ricotta, Italian cheese, 1 tbs of spice and herbs seasoning, and 1 tbs Italian seasoning. Stir to combine.
Coat salmon with olive oil. Liberally season each salmon filet with spice and herbs seasoning as well as Italian seasoning.
Cut a slit horizontally in each salmon filet. Fill filet with stuffing.
Place on grill skin side down and grill for 10 minutes. Flip and grill for another 5-6 minutes. Remove from grill.
