
Surf and turf quesadillas
Prep time: 1 hour
Cook time: 30 minutes
Servings: 4-6
Ingredients:
1/2 lb of skirt steak or steak of choice
1/2 lb of large peeled and deveined shrimp
2 lines
Fajita seasoning of choice
Shredded Colby Jack cheese
Large burrito tortillas
16 oz sour cream
3-4 chipotle peppers in adobo sauce
1 green bell pepper
1 white onion
Instructions:
Place steak and shrimp in separate bowls. Add juice from limes to each bowl of meat. Season to taste with fajita seasoning of choice. Let marinade for about an hour.
Combine sour cream and chipotle peppers in a blender. Blend until smooth. Place in fridge.
Heat grill to medium high heat. Place steak and shrimp on grill. Slice bell pepper and onion. Place on flat top with some olive oil.
Flip steak and shrimp after a few minutes. Continue to cook for a few minutes more. Shrimp will need to be removed from the grill before the steak. Remove shrimp once done. Continue to cook steak until done to desired liking.
Remove veggies from flat top.
Roughly chop shrimp. Slice steak into bite size pieces.
Assemble quesadillas with cheese, peppers, steak, and shrimp. Toast each side on flat top with melted butter until crispy and cheese is melted. Enjoy!
