These tacos are topped with my favorite jalapeno avocado ranch.
Ingredients
Prep time: 30 minutes
Cook time: 3 hours (includes marinating time)
Servings: 4
Steak
1 tbs salt
1tbs pepper
1 tsp garlic powder
1 tbs chili powder
2 tbs avocado oil
2 limes
1 orange
2 tbs fresh chopped cilantro
1 beer of choice
1.5 lbs flank steak
Jalapeno Avocado Ranch
1 jalapeño
1 ripe avocado
1 cup mayo
1 packet of ranch mix
2 tbs cilantro
Splash of milk
Corn
2 whole ears of corn
2 tbs butter
2 tbs chopped cilantro
Salt, pepper, garlic powder, chili powder to taste
Directions
Marinate steak using ingredients listed above. Let marinate for a couple hours.
While steak marinates, make jalapeno avocado ranch. Combine ingredients above into a blender and blend until smooth. Place in fridge.
Preheat grill to high heat.
Place corn on grill and grill until all sides are charred.
Place steak on grill. Reduce heat to medium high. Grill each side for 8-10 minutes or until done to liking.
Once corn is done, remove from grill. Slice off the cop into a bowl and mix in other ingredients listed above.
Remove steak from grill and let rest.
While steak rests, warm tortillas and cheese on grill.
Slice steak and assemble tacos with steak, corn, and jalapeño avocado ranch. Enjoy!
